Has it got a stock Tstat?
If it has, your always going to be fighting it.
Get a 180 deg Tstat and enjoy a cooler engine with a bit more pep with your programmer. That mod will loose you 1 / 1.5 mpg but..... You will feel a difference in performance.
Get a power wire in your CAI and that is the perfect complimentary performance combo.
Set your electronic fan at 195 - 200 and things will be good.

Yeah..... When the op said "what would be a good temperature to set fan at" I automatically assumed he had dumped the mechanical clutch fan and installed an electric fan.
To the op if you still have the clutch fan, you cannot set a temp yourself as they are preset from the factory.

I've done pushers, but only when needed. When I had my Jeep GC I cheaped out and went Autozone single core after the stock Mopar one split at the seam. Two 7" pushers and a can of Purple Ice kept it about where it was with the stock radiator.
Flex a Lite 180 in the Ram replaced the parastic clutch fan. I went for about 190* with a 180* t-stat and it comes on at 187*, close enough for me.
BTW great mod, it should net you about 1.5 - 2 mpg and get back what you lose with the richer mix of a cooler t-stat...
